Chocolate Chip Crunch Cookies



Chocolate Chip cookies with a twist

Ingredients:
1/2 cup butter at room temp
1 cup sugar
1 large egg
1.5 tsp vanilla extract (not vanillin)
1.25 cup all-purpose flour
1/2 tsp baking soda
Pinch of salt
1 cup semi-sweet chocolate chips
2 cups puffed rice cereal (Rice Krispies)

Directions:
Preheat oven to 350 degrees. Cover two baking sheets with parchment paper. Cream the butter and sugar until light and fluffy. Beat in the vanilla and egg. Sift the flour, baking soda and salt together and fold into the butter mixture.

Add the chocolate chips and cereal and gently stir until mixed. Do not overmix.

With an ice cream scoop, place scoops of mixture onto the cookie sheets about 2 inches apart.

Bake for 10 to 12 minutes until golden. Remove from oven and transfer to wire rack for cooling.


Using an ice cream scoop makes for uniform cookies and even baking. Make three dozen.
