Here are some recipes for you:

  • Summer Bean Salad
    Many bean recipes are for heavy soups or stick to your ribs rice dishes. But black beans make a great vegetarian main dish salad. You can vary this recipe, adding or taking away as you see fit, red or green onions, peas and snap peas are all great additions. If you feel adventurous, try some hearts of palm or miniature ears of corn. This salad is great at room temperature or refrigerated and leftovers keep well for two or three days.

  • Teleme, Squash, and Onion Galette
    If the words "buttery" and "crunchy" conjure up positive food images for you, then this recipe is a can't-miss. A pastry dough rather than a pizza dough, a galette is a thin, free-form pastry that has plenty of butter and does not need to rise. This dough definitely makes for a rich dish, but it also creates a delicate, flaky crust for the cheese and vegetables. The Teleme really makes this dish, and I would highly recommend you go the extra mile to find it. If you can't, then use Monterey Jack, mozzarella, or a young Provolone. This entire recipe can be doubled easily. Or you can double just the dough recipe and keep half of it frozen for later use.

  • Tempeh Sloppy Joes
    This is our own family recipe, and my kids ask for it often. In winter, we serve them with a baked potato and steamed vegetables. In summer, we eat them with corn on the cob and a fresh, garden salad.

  • Tortilla Apple Turnover
    Apples, pecans, oats, cinnamon and a touch of soy or real cream cheese all wrapped up in a flour tortilla. Good for a snack or for dessert, too. Vegan or vegetarian.
